Professional Cookery Level 3
Culinary Skills quali昀椀cations at Levels 1 and 2 offer
learners a hands-on introduction to working in a
professional kitchen. These practical courses are ideal
for those with a passion for food and an interest in a
career in hospitality and catering.
This course is aimed at learners pursuing a career in
the culinary and hospitality industry. This course offers
a more advanced, in-depth look at professional kitchen
practices and the techniques required in high-end
catering environments.
At Level 1, learners develop basic kitchen skills,
including knife handling, food safety, and preparing
simple dishes. The focus is on building con昀椀dence
and introducing learners to the structure and pace of a
professional kitchen. It’s a great starting point for those
with little or no previous experience.
Learners will re昀椀ne their abilities in preparing and
cooking a wide range of complex dishes, including
meat, 昀椀sh, poultry, desserts, and vegetarian options. The
course also places a strong emphasis on presentation,
menu planning, and working to industry speci昀椀cations.
Alongside practical skills, learners develop essential
knowledge in areas such as food safety, kitchen
supervision, and cost control — preparing them for more
senior roles within a kitchen team.
Progressing to Level 2, learners build on this foundation
with more advanced techniques, such as cooking meat,
昀椀sh, and desserts to industry standards. They also gain
a deeper understanding of health and safety, teamwork,
and the importance of time management in a busy
kitchen environment.
These quali昀椀cations combine classroom learning with
practical experience, in realistic training kitchens and
workplace environments. They prepare learners for
entry-level roles in the catering industry or further study,
such as our Level 3 Professional Cookery course.
This course is ideal for those looking to progress into
employment as a chef de partie or similar role, or to
continue their studies with a higher-level quali昀椀cation or
apprenticeship.
